PEANUT CHICKEN STIR-FRY1 lb chicken breasts, skinned and boned
freshly ground pepper or 1/4 to 1/2 tsp crushed hot red pepper (to taste)
3 tbsp peanut or vegetable oil
2 celery ribs, cut into 2-inch pieces
3 garlic cloves, finely chopped
1/2 cup water
3/4 cup dry-roasted peanuts
Cut the chicken breasts into 1/2-inch dice and season with pepper; set aside.
Heat the oil in a wok or large frying pan. Add the celery and stir-fry over high heat for 1 minute.
Add the chicken and stir-fry until almost cooked through, about 3 minutes.
Add the garlic and continue to cook, stirring, 1 minute. Add 1/2 cup water and cook for 1 minute longer.
Stir in the peanuts and serve.
