APPLESAUCE COCOA COOKIES1/2 cup vegetable shortening, softened 1/3 cup granulated sugar replacement 1 egg, beaten 2 cups cake flour* 1/3 cup unsweetened cocoa powder 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. baking soda 1 tsp. baking powder 1 cup unsweetened applesauce 1/4 cup water Preheat oven to 375 degrees F. Grease cookie sheets. Cream together the shortening and sugar replacement. Add egg and blend well. Sift all dry ingredients together and add alternately with applesauce and water to creamed mixture. Be sure to add flour first and last. Drop by teaspoon onto greased cookie sheet. Bake at 375 degrees F for 12 to 15 minutes.
