MEXICAN BLT
4 English muffins, split and toasted 1/4 cup mayonnaise 2 cups chopped cherry tomatoes 1/2 cup cilantro sprigs, chopped 1/4 cup finely chopped onions 1/4 teaspoon salt 8 slices bacon, cooked crisp and halved 1 cup shredded pepper Jack cheese
Preheat broiler.
Spread muffins with mayonnaise and arrange on cookie sheet; set aside.
In medium bowl combine tomatoes, cilantro, onions, and salt.
Top muffins with tomato mixture, bacon, and cheese.
Broil until cheese melts.
