SPINACH QUICHE
1 pkg frozen chopped spinach 1/2 cup chopped onion 1/2 cup chopped celery 1/2 stick (1/4 cup) butter 1 (9-inch) deep dish pastry shell 1/2 cup cottage cheese 1 cup grated Swiss cheese 1 cup milk 2 eggs 1 tsp salt 1/2 tsp pepper 1/4 tsp nutmeg
Preheat oven to 350 degrees F.
Cook spinach in salted water according to package directions. Drain well; set aside.
Saute onion and celery in butter until onion is soft; set aside.
Into a deep pastry shell spread cottage cheese over bottom. Mix spinach with onion mixture and spread over cottage cheese. Sprinkle Swiss cheese over top. Combine milk, eggs, and seasonings and pour over all.
Bake at 350 degrees for 40-45 minutes or until set.
