LOW CARB SUPER EASY BACON WRAPPED CHICKEN
4 boneless, skinless chicken breasts salt and pepper (to taste) 4 slices bacon extra-virgin olive oil 1 small can sliced mushrooms, drained 4 slices Swiss cheese
Salt and pepper chicken breasts; wrap bacon around each.
Heat grill pan and add a little extra-virgin olive oil. Cook chicken on medium-low heat until done (about 20 minutes total).
Preheat broiler.
Place cooked chicken in a broiler pan or baking sheet. Add mushrooms to top of each chicken breast and cover each with a slice of Swiss cheese.
Place under broiler for about 1 1/2 minutes or until cheese is bubbly.
If desired, serve with a salad and/or green vegetable.
Super easy, super fast, super low carb, but mostly super delicious!
