APPLE WALNUT CAKE WITH LEMON GLAZE

4 cups coarsely chopped peeled apples
2 cups sugar
2 cups sifted flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 eggs
1/2 cup Crisco oil
2 tsp vanilla
1/2 cup chopped walnuts
FOR THE LEMON GLAZE:
1 cup powdered sugar
1 1/2 tbsp lemon juice
1 tbsp corn syrup
1/2 tsp vanilla

Preheat oven to 350 degrees F. Grease and flour a 13x9x2-inch pan.

Combine apples and sugar; set aside.

Combine flour, baking soda, cinnamon and salt; set aside.

In a large mixing bowl, beat eggs slightly. Add oil and vanilla. Beat one minute at medium speed. Add combined dry ingredients alternately with apple mixture. Stir in walnuts. Pour batter into prepared pan.

Bake at 350 degrees F for 45-50 minutes or until cake tests done. When cool, cover top of cake with Lemon Glaze.

LEMON GLAZE:
Blend all ingredients until smooth in a small bowl. Drizzle over cooled Apple Nut Cake.
