LEMON SPINACH WITH PINE NUTS

20 ounces fresh spinach
2 tablespoons olive oil
1 small onion, sliced
1 clove garlic, minced
1/4 cup pine nuts, toasted
2 tablespoons currants or raisins
1 tablespoon lemon juice
1/4 teaspoon salt and pepper

Trim spinach and rinse under water; shake off excess. In a saucepan, cover spinach and cook over medium heat, with just the water that is clinging to the leaves, for about 5 minutes. Drain in a sieve, pressing out moisture; set aside.

In a skillet heat oil over medium heat, cook onion and garlic until softened.

Add spinach, pine nuts, raisins, lemon juice, salt and pepper to taste. Toss gently and heat for 2-3 minutes until heated through.

Per serving: 110 calories; 4g protein; 8g fat; 8g carbs. Excellent source
of iron
