EASY HOMEMADE MARSHMALLOWS

2 cups sugar
1 cup cold water
3 envelopes unflavored gelatin (such as Knox)
1/4 teaspoon salt
flaked coconut

Lightly butter a 13x9-inch pan.

In a saucepan, combine sugar, cold water, gelatin, and salt. Let set a minute to soften gelatin.

Heat until sugar is dissolved. Bring just to a boil.

Remove from heat and pour in large bowl; whip until it is cool and peaks (about 5 minutes). Pour into prepared pan. Put in refrigerator until set.

When done, cut into squares with a knife dipped in hot water. Roll in coconut.
