AFTER SCHOOL APPLE BARS
2 cups plus 2 tablespoons all purpose flour, divided use 1/2 cup plus 6 tablespoons sugar, divided use 1/2 teaspoon baking powder 1/2 teaspoon salt 2/3 cup butter 1 egg, slightly beaten 1 teaspoon ground cinnamon 2 pounds tart cooking apples (5 1/2 cups) peeled cored thinly sliced vanilla ice cream (optional)
Preheat oven to 350 degrees F.
In a mixing bowl, combine the 2 cups flour, the 1/2 cup sugar, the baking powder and the salt. Cut in butter till mixture resembles coarse crumbs. Stir in egg. Press half the mixture into an 11x7x1 1/2-inch or 9x9x2-inch baking pan.
Stir together the remaining 6 tablespoons sugar, remaining 2 tablespoons flour and cinnamon. Toss lightly with apples to combine. Layer the apple mixture evenly atop the crust. Sprinkle with the remaining half of the butter-flour mixture.
Bake in a 350 degree F oven for 45 to 50 minutes or till lightly golden.
Serve the bars warm with ice cream, if you like.
