PEACHY BEAN CASSEROLE1 (16-ounce) can brown sugar beans 2 tablespoons tomato catsup 1/4 cup peach preserves 2 tablespoons chopped onion 1 tablespoon soy sauce 4 chicken thighs or breasts Preheat oven to 350 degrees F. Combine beans, catsup, preserves, onion and soy sauce in a 10x6x2-inch baking dish. To coat chicken pieces evenly with sauce, nestle chicken in bean mixture, skin-side down, then turn pieces skin-side up. Cover and bake in preheated 350-degree oven for 1 hour. Uncover and bake 30 minutes longer, basting chicken with sauce occasionally.
