Chinese Barbecue Pork Ribs Try this marinade; you'll not be disappointed. It's delicious with ribs but it can also be used with any type of pork on the bone. Serves 6
About 2.25 lb (1kg) sheet of pork ribs 3 cloves of garlic, finely chopped or crushed 6 tablespoons of caster sugar 3/4 teaspoon of salt 2 tablespoons of hoisin sauce
2 tablespoons of yellow bean sauce 2 tablespoons of Shaoxing rice wine or dry sherry 3 tablespoons of light soy sauce 2 to 3 drops of red food colouring
Mix together the garlic, sugar, salt, hoisin sauce, yellow bean sauce, soy sauce, rice wine and food colouring.
Put the ribs in a roasting tin and pour the marinade over them. Cover and out in the fridge for about an hour, basting occasionally.
Remove the ribs from the tray and grill over medium hot coals for 45 to 60 minutes. Occasionally turning and basting with the remaining marinade. When cooked through, carve between the ribs and serve.
