I have used this recipe for Quiche for years. It never fails. I have changed the type of cheese and the fish/meat part but as long as you keep all
the quantities the same: Voila / Perfect every time !

QUICHE BRETAGNE

1/2 cup mayonnaise (Hellmann's)
1/2 cup white wine (or beer)
2 eggs, beaten
2 tbsp. flour
1 can tiny shrimp, well drained
1 can crabmeat, well drained (and picked over for cartilage)
8 oz. swiss cheese, sliced and chopped small
1/3 cup finely chopped green bell pepper
1/3 cup finely chopped onion
1 unbaked 9-inch pastry shell

Preheat oven to 350 degrees F.

Combine mayonnaise, wine, eggs, and flour. Mix until well blended.

Stir in shrimp, crab, cheese, pepper, and onion. Pour into unbaked pastry shell.

Bake at 350 degrees F for 55 minutes until puffed and golden brown.
