SHERRY CAKES WITH SHERRY GLAZE
FOR THE CUPCAKES: 1 (18 1/2-oz) pkg yellow cake mix 1 cup sour cream 4 eggs 2/3 cup sherry 2/3 cup vegetable oil 1 (3 3/4-oz) pkg instant French vanilla pudding mix FOR THE GLAZE: 2 cups powdered sugar 1/2 cup butter or margarine, melted 1/4 cup sherry
Preheat oven to 350 degrees F.
Combine cake mix (dry), sour cream, eggs, sherry, oil, and pudding mix in a large mixing bowl; beat at high speed of electric mixer 5 minutes. Spoon batter into lightly greased muffin cups, filling half full.
Bake at 350 degrees F for 18-20 minutes. Cool 5 minutes. Spoon glaze over cupcakes.
TO MAKE THE GLAZE: Combine all ingredients for the glaze together and mix well. (Makes about 1 3/4 cups)
