MARINATED GREEN BEANS WITH RED ONIONAdding the lemon juice to this refreshing salad just before serving ensures that the color stays bright.
1 pound green beans, ends trimmed
1/2 small red onion, cut in thin slivers (about 1/2 cup)
2 to 3 cloves garlic, smashed and peeled
1/2 cup olive oil
1/4 teaspoon salt
freshly ground black pepper (to taste)
3 tablespoons chopped fresh dill
3 to 4 tablespoons lemon juice
Bring a large pot of water to a full rolling boil; salt lightly. Add the green beans a handful at a time, so that the water remains at a boil. Boil, uncovered, just until crisp-tender, 3 to 4 minutes (the timing can vary, depending on the size and age of the beans). Drain in a colander under cold running water until cool; drain well. Transfer the beans to a large mixing bowl. (Do not chill.)
Add the onion, garlic, olive oil, salt, pepper, and dill to the beans; toss gently to combine ingredients and coat the beans.
Just before serving, remove the garlic cloves and add the lemon juice, tossing to coat; correct seasonings. Serve at cool room temperature.
