BAKED MONKFISH 1 1/2 pounds monkfish fillets
1 lemon lemon juice
salt and pepper to taste
2 cloves garlic, finely chopped
1 tablespoon chopped
almonds 1 tablespoon
pine nuts 3 tablespoons
olive oil 1 large onion, thinly sliced
2 large tomatoes, sliced
1/4 cup bread crumbs
1 teaspoon
paprika 1 pinch
saffron Preheat oven to 375 degrees F.
Place fish in baking dish and sprinkle with lemon juice, salt and pepper. Cover with
aluminum foil.
Bake in 375 degree oven for 10 minutes.
Saute the garlic, almonds and pine nuts in oil until golden. Drain and grind to a paste; set aside.
Fry the onion until very well colored, then add tomatoes and fry until soft.
Add the nut mixture, bread crumbs, paprika and saffron. Spread over the fish.
Bake for 15 minutes more.
