HOT SHRIMP DIP

1 pound cooked shrimp
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 tablespoon minced garlic
3 tablespoons mayonnaise
1 teaspoon vegetable oil
1 teaspoon Old Bay seasoning OR 1 teaspoon seasoned salt
1/4 teaspoon ground black pepper
1 cup shredded Monterey Jack cheese
Paprika

Preheat oven to 350 degrees F and butter or spray an 8x8-inch baking dish.

Chop the shrimp into small pieces, then combine with onion, bell pepper, garlic, mayonnaise, oil, seasonings and 3/4 cup of cheese.

Mix well and spread in prepared baking dish. Top evenly with reserved 1/4 cup cheese and sprinkle with paprika.

Bake for 20 minutes until bubbly and cheese melted.

Serve with thin slices of toasted French bread or raw vegetables.
