AVOCADO ICE CREAM3 avocados (8 oz each)
3/4 cup heavy cream
3/4 cup superfine sugar
1/2 teaspoon kosher salt
5 tablespoons fresh lemon juice
Peel and pit the avocados. Cut them into chunks and puree in a
food processor. You should have about 2 1/2 cups of puree.
With the
ice cream machine running, add the remaining ingredients. Pour the avocado puree into the bowl of the machine and freeze.
Makes about 1 quart
