SPINACH SALAD WITH APPLES,
BLUE CHEESE, AND HOMEMADE DRESSINGFOR THE DRESSING:1 clove garlic, minced
1/4 tsp. salt (optional)
2 Tbsp.
red wine vinegar 1 tsp.
Worcestershire sauce 2 Tbsp. olive oil
FOR THE SALAD:3/4 lb. spinach, washed, dried and torn into bite size pieces, stems discarded
2 Jonathan or Macintosh apples, washed, cored and cubed
1/4 lb. blue cheese, crumbled
1 cup herb croutons
Combine first 5 ingredients in a jar with a tight-fitting lid. Shake vigorously.
Combine spinach, apples, and blue cheese in a salad bowl. Pour dressing over salad and toss with croutons. Season with pepper to taste.
