APPLE, CARROT, AND WALNUT SALAD3 cups carrots, grated or shredded
2 Jonathan or Macintosh apples, washed, cored and diced
1/4 cup chopped walnuts
FOR THE DRESSING:2 Tbsp. olive oil
1 Tbsp.
red wine vinegar 1 tsp.
Dijon mustard 3/4 tsp. salt (optional)
1/4 tsp. pepper
Combine carrots, apples and walnuts in a salad bowl.
Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously.
Pour dressing over salad and toss.
