LOWER FAT SMOKED SALMON MUFFINS WITH HERB CHEESE
3 oz. fat-free cream cheese, softened 1/4 cup minced green onions 1/4 cup minced fresh parsley 1/4 cup chopped fresh dill 2 tsps. lemon juice 2 English muffins, split and toasted 4 slices lox or smoked salmon Combine cream cheese, onions, parsley, dill, and lemon juice in a bowl.
Spread herb cheese mixture on each muffin half. Top with salmon.
