RED PEPPER AND AVOCADO SALAD
2 avocados, halved, pitted, peeled and thinly sliced 3 red bell peppers\raw, seeded and cut into thin strips 1 Tbsp. parsley, chopped 3/4 lb. packaged salad 1/8 tsp. salt (optional) 1/2 cup light Italian dressing 1 cup cheese & garlic croutons Combine first 5 ingredients and pepper to taste in a bowl.
Pour dressing over salad and toss with croutons.
