ONION AND AVOCADO SALAD WITH FRENCH DRESSING
FOR THE FRENCH DRESSING: 6 oz. olive oil 1/4 cup wine vinegar 1 tsp. French mustard 1 clove garlic, crushed 1 tsp. clear honey salt and pepper FOR THE SALAD: 1/2 of an avocado, stoned 2 tsp. lemon juice 3 crisp lettuce leaves, shredded 2 spring onions, chopped 1 red bell pepper, cored, deseeded and roughly chopped 1 oz. peanuts
Put the olive oil, vinegar, mustard, garlic, and honey in a screw-top jar, adding salt and pepper to taste. Shake French dressing well to blend before serving.
Peel and slice the avocado. Place in a serving bowl and sprinkle with the lemon juice. Add the lettuce, spring onions, red pepper, peanuts and French dressing. Toss well and season with salt and pepper to taste. Chill before serving. Servings: 2 |
