BANANA STRAWBERRY CREAM PIE
3/4 cup sugar 2 tbsp cornstarch 3 tbsp all-purpose flour 1/8 tsp salt 2 cups milk 3 eggs, slightly beaten 1/2 tsp vanilla 2 cups sliced strawberries, divided use 4 bananas, divided use 1 (9-inch) baked pie shell
TO MAKE THE CREAM FILLING: In medium saucepan, mix sugar, cornstarch, flour and salt. Stir in milk. Place over medium heat and cook, stirring constantly, until mixture comes to a boil. Cook, stirring, 5 minutes.
Remove from heat, and stir a little of the hot mixture into the eggs, then stir warmed eggs into the saucepan. Return to low heat and cook, stirring constantly, 1 minute.
Remove from heat, add vanilla, cover and refrigerate until cold.
TO ASSEMBLE PIE: Peel 2 bananas and cut into slices. Turn half of cooled custard into pie shell and top with 1 cup strawberries and 2 sliced bananas. Top with remaining custard and chill.
TO SERVE: Just before serving, slice remaining 2 bananas and arrange with strawberries on top of pie.
