GREEK VEGETABLE JUMBLE WITH MINT DRESSING
2 cups cooked cut green beans 1 cup coarsely chopped tomatoes 1 cup sliced zucchini 1 small onion, cut into rings 1/2 cup chopped green bell pepper 1/2 cup ripe olives 2/3 cup bottled or homemade Italian dressing 1 tbsp chopped fresh mint or 1 tsp mint flakes
In a 1 quart jar, layer beans, tomatoes, zucchini, onion, green pepper, and olives;
Add Italian dressing that has been blended with the mint.
Secure lid tightly and chill, turning jar occasionally, 4 hours or overnight. Store in refrigerator for up to 1 week.
