DATE NUT SQUARES

1 1/3 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
3 eggs
1 cup dark corn syrup
1/2 cup corn oil
1/2 tsp vanilla
1 (16 oz) pkg pitted dates, finely chopped
1/2 cup chopped nuts
powdered sugar (optional garnish)

Preheat oven to 350 degrees F. Grease 15 1/2x10 1/2x1-inch jelly roll pan.

In small bowl stir together flour, baking powder, and salt.

In large bowl of electric mixer beat eggs on high speed until thick and light colored. Add corn syrup, corn oil, vanilla, dates, and nuts; beat on medium speed until well mixed. Stir in dry ingredients. Turn into prepared pan.

Bake at 350 degrees F for 25-30 minutes or until cake tester inserted in center comes out clean. Cool; cut into squares. If desired, dust with powdered sugar.

VARIATION:
Mixture may be baked in greased 9x9x2-inch baking pan. Bake at 350 degrees F 45-50 minutes or until cake tester inserted in center comes out clean.

Makes 25 squares
