I borrowed
Rachael Ray's Express Lane Meals from the library the other day. There are lots of yummy sounding recipes in it. This is a combination of two of them that I made the other night with what I had on hand. It made four burgers, we each had one and I froze the remaining two.
MICHA’S PART AND PARCEL BURGERS4 slices bacon
1 1/3 pounds (approximately) ground turkey breast (no skin)
1/3 pound reduced fat sharp cheddar cheese, broken into 1/4-inch pieces
2 scallions, finely chopped
Salt and freshly ground pepper, to taste
2 garlic cloves, finely minced
Olive oil
Fat-free Ranch dressing
Tomato slices
4 slices sourdough bread
Fry bacon until crisp, drain and reserve. Wipe out skillet.
In a medium bowl, mix together the ground turkey breast, cheddar pieces, chopped scallions, salt and pepper and garlic. Form 4 patties and drizzle them with olive oil.
Cook the burgers for 5 to 6 minutes on each side.
Freeze two of the burgers.
Spread Ranch dressing on 2 slices of the bread, top with the 2 remaining burgers. Top burgers with 2 slices bacon each, tomato slices and then with remaining bread slices.
Serves 4 (but froze two)
