RED APPLE SALAD1 1/2 cups sugar
1/2 cup
red cinnamon candies (red hots)1/4 tsp salt
3 cups water
4 firm tart apples, pared and cored
TO SERVE:1/2 cup cottage cheese
1/4 cup chopped green pepper
watercress or other dark greens
Add sugar, candies, and salt to the water in a saucepan. Put over heat and stir until dissolved. Place apples in pan. Cover and cook slowly in the syrup until just tender, turning occasionally to color evenly. Drain and chill.
TO SERVE:Mix cottage cheese with green pepper and stuff the apples. Serve on watercress or other dark greens.
