LEMON REFRIGERATOR SQUARES
1 can (300 mL) Regular or Low Fat Eagle Brand® Sweetened condensed milk 1/2 cup (125 mL) lemon juice 1 tsp (5 mL) grated lemon rind 27 graham wafer biscuits 2 cups (500 mL) whipping cream, whipped (optional, to serve)
Blend Eagle Brand, lemon juice and lemon rind until mixture thickens.
Line an 8-inch (20 cm) square pan with parchment paper, then place 9 graham wafer biscuits, fitted together, to cover bottom of pan.
Spread with half the lemon filling, making sure biscuits remain in place. Repeat with layer of 9 biscuits and lemon filling. Top with remaining 9 biscuits. Chill 6 hours or until set.
Remove dessert from pan and peel off paper. Cut into squares and serve topped with whipped cream.
