FRESH FIG CAKE3 cups all-purpose flour
1 1/2 cups chopped pecans
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp allspice
1 tsp cinnamon
1 tsp ground cloves
1 tsp nutmeg
1/2 tsp salt
2 1/2 cups chopped fresh figs
1 cup oil
3 eggs
2 tsp vanilla
2 tsp rum or rum flavoring
3 cups sugar
Preheat oven to 350 degrees F. Grease 3
loaf pans and dust with flour.
Stir flour, pecans, baking soda, baking powder, spices, and salt together well.
Mix figs, oil, eggs, vanilla, and rum together well. Add sugar, stirring until syrupy. Add to dry ingredients. If mixture is too moist, add more flour. Fill prepared pans about half full.
Bake at 350 degrees F until firm, about one hour.
