QUICK ZIPPY OMELETTE

1/2 cup picante sauce or salsa
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
6 eggs
8 ounces sour cream

Preheat oven to 350 degrees F.

Put sauce in bottom of a 10-inch pie plate that has been sprayed with cooking spray. Sprinkle cheese over sauce.

Beat eggs with sour cream and pour over cheese.

Bake 30-40 minutes. Cheese will come to the top.

Top each serving with some extra sauce if desired.
