CHEESE AND SPINACH MUFFINS

2/3 cup milk
1 tablespoon vegetable oil
1 egg
2 cups Original Bisquick® mix
1/2 cup coarsely chopped fresh spinach
1/2 cup shredded Swiss cheese (2 ounces)
1/4 cup grated Parmesan cheese
2 tablespoons chopped green onions

Preheat oven to 400 degrees F. Grease bottoms of 12 regular-size muffin cups.

Beat milk, oil and egg in medium bowl until blended. Stir in remaining ingredients just until moistened. Fill muffin cups 2/3 full.

Bake 15 minutes or until golden brown; cool slightly. Remove from pan. Serve warm.

High Altitude (3500-6500 ft)
Heat oven to 425ºF.
