ZITI, BEEF, AND ZUCCHINI
FOR THE PASTA: 5 ounces uncooked ziti pasta (1 1/2 cups) FOR THE BEEF AND ZUCCHINI: 2 teaspoons olive or vegetable oil 1 medium onion, chopped (1/2 cup) 1 teaspoon finely chopped fresh garlic 1 pound ground beef 1 medium zucchini, cubed (2 cups) 1 tablespoon chopped fresh oregano leaves 1/2 teaspoon salt 1/4 teaspoon pepper 4 ounces Land O Lakes mozzarella cheese, shredded (1 cup)
Cook pasta according to package directions, Rinse with hot water; drain. Set aside,
Meanwhile, in 10-inch skillet heat oil; stir in onion and garlic. Cook over medium high heat, stirring constantly, until onion is soft (1 to 2 minutes).
Crumble ground beef into skillet. Continue cooking, stirring occasionally, until ground beef is browned (5 to 7 minutes). Drain off fat.
Stir in cooked pasta and all remaining ingredients except cheese. Continue cooking, stirring occasionally, until zucchini is crisply tender (5 to 6 minutes).
Stir in cheese. Continue cooking until cheese is melted (1 to 2 minutes).
