OATMEAL ORANGE LACE COOKIES
1/2 cup all-purpose flour, sifted 2/3 cup granulated sugar 1/2 tsp salt 1 cup butter, room temperature 2 eggs 1 tsp grated orange rind 1/2 tsp vanilla extract 1 cup rolled oats 1/2 cup moist shredded coconut meat
Preheat oven to 350 to 375 degrees F. Grease cookie sheets.
Sift the flour, sugar, and salt into a mixing bowl. Add the butter, eggs, orange rind, and vanilla extract; blend thoroughly. Fold in the oats and coconut. Drop from a teaspoon 2 inches apart onto the prepared cookie sheets. Flatten with a knife which has been dipped in cold water.
Bake for 10 to 12 minutes. Remove from cookie sheets immediately.
