ONE-DISH TUNA RICE BAKE

1 egg
1 1/2 cups uncooked instant (Minute) rice
1 lb. Velveeta cheese, shredded, divided use
2 cans (7 oz. each) tuna, drained and flaked
1/3 cup sliced green olives
2 tablespoons minced onion
2 teaspoons dry mustard
1 teaspoon salt
Dash pepper
1 (12 oz.) can evaporated milk
1/2 cup water

Preheat oven to 350 degrees F.

In ungreased 2-quart casserole, beat egg slightly. Mix in rice, 1 1/2 cups of cheese, tuna, olives, onion, and seasonings. Stir in milk and water. Sprinkle remaining cheese on top.

Cover and bake for 45 minutes or until hot and bubbly.

Servings: 6
