Vegetable Cream Cheese

1 (8 oz)pkg. cream cheese, softened
2 tbsp finely chopped carrot
1 tbsp finely chopped scallion, white part
1 lg radish, finely chopped
1 (1-2 inch) piece of celery stalk, finely chopped
1/8 tsp white pepper (optional)
1/8 tsp salt (optional)

Place the cheese in the mixer, apply medium power (3 on RecipeAide) and blend cheese to a creamy stage. Add additional ingredients and blend on low (2 on RecipeAide) till fully mixed into cheese. Scrape out of mixer bowl with a spatula and store in covered plastic bowls in refrigerator for 24 hours for the flavors to mingle.

Serve on toasted bagels, as an omelet filling, with crudites or crackers, etc.
