HOT PEPPER SESAME PEANUTS2 cups lightly toasted shelled peanuts
2 teaspoons toasted sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon red pepper flakes
3/4 to 1 teaspoon chili powder, to taste
1 1/2 to 2 teaspoons kosher salt, to taste
Preheat oven to 250 degrees F. Line baking sheet with parchment paper.
Place peanuts, oil, garlic powder, ginger, pepper flakes and chili powder in a medium-size bowl and toss until nuts are well coated. Transfer nuts to prepared sheet and arrange in single layer.
Place in oven and bake 10 minutes. Remove from oven, immediately loosen nuts with metal spatula, sprinkle evenly with salt, and set aside to cool for 1 hour before serving.
These pair well with sake. Or toss into sesame noodles and shredded salads with chicken, shrimp or crabmeat.
