SPINACH CASSEROLE
FOR THE CREAM SAUCE: 1/4 cup plus 1 tablespoon butter, divided use 1/4 cup flour 3/4 cup milk FOR THE CASSEROLE: 1 (10 oz) package frozen chopped spinach 2 cups chopped onion 1 package Jiffy Corn Muffin Mix 2 beaten eggs 1 cup sour cream Swiss Cheese (for topping, optional)
Preheat oven to 350 degrees F. Grease 1 1/2 quart casserole.
TO PREPARE THE CREAM SAUCE: Melt 1/4 butter in saucepan over low heat. Blend in flour. Cook, stirring constantly, until mixture is smooth.
Remove from heat, add milk gradually. Heat to boiling, stirring constantly. Boil 1 minute. Set aside.
TO PREPARE THE CASSEROLE: Cook and drain spinach. Set aside.
Saute onion in the remaining 1 tablespoon butter. Mix spinach with onion. Set aside.
Combine Corn Muffin Mix (dry), with the eggs, and sour cream. Blend well. Add spinach mixture and cream sauce. Pour into the prepared casserole.
Bake for 45 minutes.
Sprinkle Swiss Cheese on top. Return to oven until cheese is melted.
