CHINESE BEEF BAKE
1 1/2 pounds ground beef 1 large onion, chopped 2 stalks celery, sliced 8 ounces sliced mushrooms 1 (10-ounce) can condensed golden mushroom soup, undiluted 1/2 teaspoon ground ginger 1 teaspoon garlic powder 1/4 cup milk 1/4 cup soy sauce 2 cups cooked rice 1/2 cup salted cashews 1 (5-ounce can) chow mein noodles
Preheat oven to 350 degrees F.
Cook ground beef, onion, and celery in a large skillet over medium heat, stirring occasionally, until ground beef is browned and crumbly, about 10 minutes. Drain.
Add mushrooms, soup, ginger, garlic powder, milk, soy sauce, and rice to skillet. Mix well. Spoon into a medium baking dish.
Bake casserole until heated through, about 20 minutes.
Sprinkle cashews and noodles over casserole. Bake until cashews are toasted, about 10 minutes longer.
VARIATION: Add 1 small can of water chestnuts, drained, to the beef mixture before baking for an extra crunch.
