GHOSTLY PUMPKIN MUFFINS WITH CINNAMON CREAM CHEESE SPREAD
FOR THE MUFFINS: 1 (16 oz) can pumpkin 1 egg 3/4 cup sugar 1 tbsp pumpkin pie spice 2/3 cup milk 2 tbsp oil 1/2 cup nuts 2 cup Buttermilk Baking Mix (Bisquick) FOR THE CINNAMON CREAM CHEESE SPREAD: 1 (8 oz) pkg cream cheese, softened 2 tsp cinnamon sugar 1 tsp orange extract
TO MAKE THE MUFFINS: Preheat oven to 400 degrees F. Grease or paper link 18 muffin tin cups.
Mix the pumpkin with the egg. Add the sugar, Pumpkin Pie spice, milk, oil, and nuts. Stir in buttermilk baking mix. Spoon into prepared tins.
Bake in 400 degree F oven 25 minutes. Cool.
TO MAKE THE CINNAMON CREAM CHEESE SPREAD: Combine softened cream cheese, sugar and orange extract.
Slice cooled muffins in half and top both halves with Cinnamon Cream Cheese Spread. Sprinkle with Cake Mate Harvest Decors or colored sprinkles.
