SHRIMP-STUFFED CELERY
2 to 3-inch celery sticks FOR THE SHRIMP STUFFING: 1 (4 1/2-oz) can shrimp, drained and chopped 1/3 cup mayonnaise* 1/4 cup crushed pineapple 1 tbsp chopped walnuts 2 tsp minced parsley 1 1/2 tsp lemon juice 1/4 tsp salt dash hot pepper sauce
Combine ingredients for the dip, mixing well.
Stuff mixture into celery sticks.
*For a thicker spread, substitute 1 (3 oz) pkg cream cheese, softened for the mayonnaise.
