SNAPPY CHEESE WAFERS2 cups shredded sharp cheddar cheese
1 cup butter or margarine, softened
1/4 to 1/2 tsp ground red pepper (cayenne) (or to taste)
1/2 tsp dry mustard
1 cup all-purpose flour*
2 cups crispy rice cereal
Preheat oven to 350 degrees F. Lightly grease cookie sheets.
Combine cheese and margarine; cream until smooth, using electric mixer. Add red pepper, mustard, and flour; mix well. Stir in rice cereal.
Form dough into small balls; flatten with a fork to make wafers. Place on prepared cookie sheets.
Bake at 350 degrees F for 12-15 minutes or until lightly brown. Store in airtight container.
Makes about 3 dozen
