RICH CHOCOLATE PUMPKIN TRUFFLES

2 1/2 cups crushed vanilla wafers
1 cup almonds, toasted and ground
3/4 cup powdered sugar, sifted, divided use
2 teaspoons cinnamon
1 6 ounce) pkg (semi-sweet) chocolate chips
1/2 cup canned pumpkin puree (not pie filling)
1/3 cup coffee liqueur*

In medium bowl, combine vanilla wafer crumbs, ground almonds, the 1/2 cup powdered sugar, and cinnamon. Blend in chocolate, pumpkin, and coffee liqueur.

Form into 1-inch balls. Chill.

Dust with remaining 1/4 cup powdered sugar just before serving.

*Note: Apple juice may be substituted for coffee liqueur if desired.

Makes 48 truffles
