CHOCOLATE-BALSAMIC VINEGAR

1/2 cup superfine sugar
1 ounce dark chocolate
7 tablespoons vinegar (half balsamic and half apple cider vinegar)

Gently heat sugar and vinegar in small, deep pan until sugar dissolves, then leave to bubble slowly for 5 minutes.

Take pan off heat and whisk in chocolate well; let cool.

When cool, stir again quickly. Pour into small, clean jar, seal and store until needed.

Makes about 1 cup
