MINNESOTA CHERRY MUFFINS
4 tbsp butter or margarine 3/4 cup sugar 1/4 tsp salt 2 eggs, beaten 3/4 cup sour cream 1/2 tsp baking soda 1 1/3 cups flour 1 cup pitted cherries (fresh or frozen)
Preheat oven to 400 degrees F. Lightly butter muffin pan cups.
Cream together the butter, sugar and salt.
Mix together the eggs and sour cream. Add to the butter mixture.
Combine the baking soda and flour. Stir in cherries. Add dry mixture to butter and egg mixture. Stir only until dry ingredients are moistened. Spoon into prepared muffin tins or muffin cups.
Bake at 400 degrees F for 20-22 minutes until golden, and when tested with toothpick, no batter clings.
Serve warm from the oven with sweet butter.
