PEAR AND BLUE CHEESE SALAD
FOR THE DRESSING: 1/3 cup olive oil 1 1/2 tablespoons balsamic vinegar 1 tablespoon Dijon style mustard 4 teaspoons honey 1/4 teaspoon salt FOR THE SALAD: 1 (10 ounce) bag of mixed salad greens 2 pears, peeled and diced 4 ounces crumbled blue cheese 1/2 cup chopped pecans
Place all dressing ingredients in a small bowl. Whisk together until combined.
Place salad greens in bowls or plates. Top with diced pear, blue cheese, and pecans. Top with salad dressing. (I prefer to toss it all together in one large bowl before serving.)
Yield: 4 to 6 servings
