ROAST PORK WITH SWEET AND WHITE POTATOES1 boneless pork loin roast (3 1/2 pounds) 1 large garlic clove, cut into slivers Fresh thyme leaves or 1 teaspoon dried 2 tablespoons reduced-sodium soy sauce 1 teaspoon Worcestershire sauce Nonstick cooking spray 1/2 teaspoon freshly ground black pepper 2 each: baking potatoes and sweet potatoes 2 tablespoons cup olive oil Cut tiny slits in surface of pork. Insert garlic and thyme. Place pork in plastic food-storage bag. Add soy sauce and Worcestershire. Seal bag. Refrigerate and marinate 1 hour or overnight. WHNE READY TO COOK:Heat oven to 400 degrees F. Lightly coat small baking pan with nonstick spray. Remove pork from bag; place on rack in roasting pan. Discard leftover marinade. Sprinkle pork with pepper. Pour 1/2 inch hot water into pan. Roast pork 1 hour or until pork registers 160 on an instant-read thermometer. Let rest 10 minutes before slicing. Meanwhile, cut potatoes in half lengthwise; brush each with oil. Place, cut side down, in prepared baking pan. Add to oven the last 25 minutes of pork roasting time.
