WONDERFULLY MOIST BREAD DRESSING
3 to 4 loaves bread 6 to 12 green onions, finely chopped 2 large white cooking onions, finely chopped 3 leafy celery stalks, finely chopped 21/2 sticks (1 1/4 cups) butter, divided use (not margarine) 2 to 3 cans (10 3/4 oz each) condensed cream of chicken soup 1 to 2 cans (10 3/4 oz each) condensed cream of mushroom soup 3 to 5 tsp salt (to taste) 2 to 4 tsp freshly ground black pepper 2 to 5 tsp poultry seasoning 2 to 3 tsp sage 1 to 2 cups chicken broth or turkey stock
Break bread into small crouton type pieces place in large pan; set aside.
Put onions and celery in fry pan and cook in at least 2 sticks of butter letting the onions and celery completely become tender.
Pour onion mixture over bread adding two cans of cream of chicken soup and one of cream of mushrooms soup. Add salt, pepper, poultry seasoning, and sage to minimums and mix using hands. Make sure all bread crumbs are moistened with soup mixture and onions.
Add chicken broth to moisten mixture to your preferences. Adjust seasonings to your own and your families taste.
I tend to use 4-5 teaspoons of poultry seasoning and 2 of sage with 5 teaspoons of salt and 2 1/2 teaspoons of pepper. I will also add 3 cans of cream of chicken soup and 2 cans of cream of mushroom soup.
This makes the most moist stuffing in the world and is the recipe that my mother used to make stuffing by.
