CRUNCHY ONION CORN MUFFINS
2 pkgs. (7 1/2 oz each) corn muffin mix 1 medium-size sweet Vidalia onion, finely chopped 1 (8 oz) container sour cream 1 cup cream-style corn 1 cup grated cheddar cheese 2/3 cup oil 2 eggs 2 chopped canned green chilies 1 tbsp salt (or to taste) 1 1/2 cups French fried onion rings, crumbled
Preheat oven to 350 degrees F. Grease muffin pan cups.
Mix all ingredients together, except onion rings. Fill prepared muffin cups to 2/3 level. Top with onion rings.
Cover with foil and bake for 15 minutes. Uncover and bake 15 minutes more. Source: Vidalia Onion Cookbook by Folsom Farms
