BAKED PORK CHOPS WITH HERBS8 pork chops (not too thick)
4 cups bread crumbs, freshly made or purchased
1 1/2 cups chopped chives
1 cup minced fresh parsley
1/2 cup peanut or safflower oil
4 tablespoons garlic salt
3 tablespoons thyme
salt and pepper to taste
Preheat over to 400 degrees F. Cover a shallow baking pan with foil.
Trim excess fat from chops.
Combine all other ingredients and mix thoroughly.
One by one, press pork chops down on breadcrumb mixture, coating both sides of the chops.
Lay chops in a single layer on prepared baking pan. If any bread crumbs are left when you finish, add them to the top of the pork chops, pressing the mixture onto the top of the chops.
