DELICIOUS BLACK-EYED PEA AND CORNBREAD SALAD2 packages cornbread mix, baked per package instructions (or 1/2 skillet cornbread) (about 3 cups) 8 slices bacon, cooked crisp and crumbled 6 green onions, chopped 1/2 cup mayonnaise 1 cup black-eyed peas 2 eggs hard-boiled, chopped 1/2 green bell pepper, chopped 1/2 red bell pepper, chopped 1 large tomato, chopped Crumble cornbread into large bowl.
